Ingredients

Tuna Casserole

  • 2 tbsp of olive oil

  • 1/4 cup of chopped onions

  • 3 cups of sliced cremini mushrooms

  • A bunch of trimmed green beans

  • 3 minced garlic cloves

  • 2 cups half and half cream

  • 1-2 cans of drained tuna (based on preference)

  • Enough grated or shredded cheese to cover

  • tater tots

Preparation

Preheat over to 450 degrees and spray a 9x13 baking container.

In a large pan, heat 1 to 2 tbsp of olive oil. Add a 1/4 cup of chopped onion. Then add 3 cups of cremini mushroom. Add desired amount of trimmed green beans. Cook for 7 to 8 minutes.

Stir in garlic. Cook for 1 more minute. Increase heat to medium/high and add in the half and half cream. Once combined, scoop the vegetable mix into the baking container.

Drain tuna, and top the vegetable mix. Then sprinkle shredded or grated cheese to cover. Cover the cheese with a layer of tater tots.

Bake for 30 to 35 minutes, until taters are browned and the rest of dish is bubbling. Enjoy!
